I was cruising Pinterest last week and saw this amazing looking recipe: Creamy Spinach and Artichoke pizza from The Sweets Life. Just like the ooey gooey dip but reinvented into a healthier (way lower fat) form. Plus I thought it would be a great way to use up my ready-to-harvest spinach in my front garden. Turned out pretty tasty. Check it out:
For mine, I got whole wheat pizza dough from the Whole Foods deli and rolled them into two long skinny pizzas. Pre-heating the stones didn't go so well for me. I have well seasoned Pampered Chef pizza stones and I think the fat build up on them started smoking at the high heat the recipe prescribed and set off my smoke detectors. I ended up having to lower the oven temp to about 450 degrees and just baked it til it looked done.
I also ended up with a lot of extra sauce. I probably could have covered a third half-size pizza with it.
My husband and kiddo LOVED it (me, too, of course). It even made great leftovers the next day. Joe's requested that I make it again soon. I think next time I want to try making it on the grill to see if I can make it more summer friendly (because let's be honest....there's not going to be too much inside baking happening when it's hot outside). Give it a go. Your kids might even love it so much they'd have no idea they're eating something that's good for them
